Chocolate Cake Day
Are you eating a delicious bite of chocolate cake right now? Do you need a recipe to celebrate today... later tonight? We've got you covered. Below is a recipe I've used a few times and received the silence of approval as it went down with either a Cabernet Sauvignon from California OR a tall glass of ice cold milk.

Ingredients:
1 cup unsalted butter
1 cup brown sugar
3 large eggs
2 teaspoons real vanilla extract
1/2 cup unsweetened cocoa powder
6 ounces milk chocolate, chopped (the better quality chocolate the better it will taste!)
1 1/4 cup buttermilk
2 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Method:
Preheat the oven to 350°F and butter a cake pan 9", dust with flour or a little extra cocoa powder
Melt butter over medium heat and add chopped chocolate. Stir until almost all chocolate is melted. Add cocoa powder and whisk until smooth. Let it cool slightly. In another bowl, mix eggs, vanilla and sugar until doubled in volume. Slowly add the buttermilk then add the cooled chocolate mixture. Sift together the flour, baking soda, baking powder and salt then add this to your chocolate mixture, whisking until smooth. Transfer to the prepared pan and bake 35 - 45 minutes or until the centre comes out clean when a toothpick is inserted. Transfer the pan to a wire rack and let cool completely before removing.
